ENTREES

Guest may have either a Country Breakfast or full Gourmet Breakfast. Christine will try to satisfy dietary needs.

She always begins breakfast with fresh fruit and juice. She offers regular, decaf or gourmet (flavored) coffees along with a variety of teas, including Bigelow Teas.

In her repertoire of entrees she offers German Apple Pancakes, Buttermilk Pancakes, French Banana Pancakes (crepes), her own very delicious Helm House Crepes, Peach Upside Down French Toast, varieties of omelets, Eggs Benedict, Orange Coffee Cake, Apple Raisin Quiche, Varieties of Breakfast casseroles, muffins & cereals, or our local favorite, Country ham with biscuits & gravy. She always works out the menu with the guests, taking into consideration any special dietary needs.

Many guests enjoy breakfast in the dining area of the spacious kitchen or in the Sun Room, a wonderful place to watch it snow outside or to welcome the rising sun year round.

Cooking is one of her favorite things to do. Having grown up into a large family then having a large family of her own, she has always had to cook. She has taken cooking classes in Louisville and Shelbyville, KY and has been to the Greenbrier Resort in White Sulphur Springs, W.Va., to the world famous French Cooking school, La Varenne that is operated by Anne Willan. She has conducted cooking demonstrations for the Owensboro Herb Society, of which she is a member.

In the near future she will be offering Cooking Classes at La Hacienda de los Colemans. She is now putting the finishing touches on the new kitchen dining room that has been named the "Celebration Room".   She will offer evening classes, week-end classes and combination specials. She will do most of the instructing herself, however, plans are to stage dramatic culinary performances by some of the finest professionals in the business.
